freezing

i lied yesterday about the waffle porn. i did make waffles today! they were the ginger pear waffles from vwav, and i subbed apple cider for juice and soy nog for soymilk so they were like holiday ginger pear waffles. so delicious, and appropriate since i froze most of them to be eaten in a month or so when my parents are in town. but i didn't take any pictures because my waffles are just ugly. they taste fine but i can't get them to have to clean corners that everyone else can.

regarding freezing, i may have gone a little overboard. to the best of my recollection, here's some of what is in my freezer right now:


  • my spinach lasagna

  • autumn minestrone

  • vwav curried split pea soup

  • a kale cream sauce for pasta

  • broccoli cheese soup

  • my black bean soup

  • my raisin bran muffins

  • veganomican sunshine happy happy muffins

  • vwav raspberry chocolate chip blondies

  • my pumpkin bread

  • matzo ball soup

  • candle cafe potato leek soup

  • my northwest meets southwest chili

  • veganomican tomato and rice soup

  • and now: ginger pear waffles



there might be some more, but that's all i can remember. and my freezer is so tiny, you guys, that it's a feat that there is this much in there. it helps that the soups are mostly in freezer bags rather than hard-sided containers, because they take up less space.

and i'm not even done! i hope to get some pumpkin waffles, another lasagna, and a ton of mac and cheese in there over the next couple of weeks. my goal is to not have to cook at all for the first two weeks that the baby is here. do you think i can do it?

You won't think you've gone overboard, you will be praising your crazy foresight! (I'm still at home with a new baby, and while I appreciate the few seconds getting away to the kitchen gains me, I wish I had more food still in my freezer... we ate all of ours in the first week.)

That is amazing. I have to be honest, I freak out about homemade frozen foods and have a hard time freezing anything besides beans...but that's besides the point.
And once the baby comes, I am more than happy to bring any last minute food over at any time during the first 3 years! You can hold me to that : )

I have never frozen anything....(hangs head in shame)..I need to take your lead and jump in! It is the smartest idea to have the food ready before little one arrives.

(says to self...must freeze food...must not be afraid...must be prepared so i don't end up eating cereal and toast for the first two weeks after the birth...must freeze food)

you won't be cooking b/c we'll be cooking FOR YOU. i'm going to make a food chain for you, that's all there is to it. do you know what i'm talking about? i'll tell you all about it. but, i know you can fill your freezer, b/c all that is left to do at this point is obsess, right!?
