geeking out about food

is there anything better than having fellow food geeks as friends? no, no there isn't. here's the latest example.

the other night, i was emailing back and forth with my pal josh, who said he'd be making my baked wontons recipe that week. so i said:

"hey if you or michelle need company going to the asian market for the vegan wonton wrappers, drop me a line because i seriously need to head out there. i'm making the real food daily cashew cheddar cheese soon and that shit calls for a whole cup of agar. that's like, what, $10 at new seasons? F that."

minutes later, i got an email from michelle:

"that cheese rucking focks, for one thing. BUT, you can use the agar powder which is 90 cents from the asian market and not the agar flakes. it's all about the weight. so it's actually super cheap! i think she had a comment about that in the book, but you might not have that info. so i use one little package of agar powder and it's perfect for the recipe. i even have several of them, and would be happy to drop one off for you!"

and then a minute after that, i got a reply from josh:

"michelle just spent a few minutes very animatedly telling me what she just emailed you. arms waving, making measurement signs with her hands. agar. who would have thought it'd bring out the mime in my wife."

food geeks, i love you so much!

i'm confused. i want to make this and I have the book. how much agar powder in a little packet? what? and i can picture the michelle thing, she did that when i stuffed some tofu.

oh my god kittee i'm sending you a packet of agar!! i miss kitteee.....(whine ensues)
okay. the packet is about a little less than 2 ounces, and it's super cheap. like 88 cents or something totally bizarre. the book calls for about 2 ounces of agar FLAKES, which is so expensive. (eden brand) i got wise and went cheap. you don't need to spend as much time stirring and dissolving, though. so know that. and let me tell you. CHEESE HEAVEN.

ps. i've also found a 6 ounce package of agar powder at fubonn that was about 2.50 -- even cheaper! but you need a scale.

oh, and yes, i do the crazy thing with my arms whenever i think of kittee stuffing tofu. have you seen the herbivore online this month! CRAP! i want some now. kittee, lear jet, stat!

i am totally making kittee's stuffed tofu this week!!! i have some squashes from my CSA that are begging to be roasted and stuffed in tofu and then coated with corn flakes!!

I am so happy to know I'm not alone in my food geekiness! I get so excited and animated about food and ingredients (and appliances). Sometimes Jay just stands there looking at me like I've got 2 heads, as I'm going off on some cool recipe or technique. We should start a food geek club.

Now that I know Michelle is so excited by that Cheeze recipe, I'm going to have to try it. I held off though because I didn't want to use a ton of agar flakes. Way too expensive.

oh my gosh, that is so funny. I also do the same switcheroo for asian market agar powder for the flakes in that same recipe. love it.

can we all just hang out here? i really like the couch and the company is just deee vine. also, last night while i was trying to sleep, i thought another really good tofu version would be sauted onions with chopped spinach, pine nuts and sumac, aka a lebanese version...

kittee, i've made stuffed tofu very similar to the one you're describing!! you know lebanese spinach pies? the filling was like that, except in tofu, and then pan-seared. it was knock-your-socks-off delish.
