mac and cheese #2: vegan fusion world cuisine's menehune's macaroni and cheez



you know what this tastes exactly like? road's end mac and chreese. from what i remember, because i haven't had the stuff in at least two years, but i used to buy it fairly often when i was a baby vegan because i was still so excited by the novelty that i could buy food in a box and eat it, just like before i went vegan, when i was a lazy vegetarian! (i got over that, luckily.)

anyway, this recipe scores right down the middle taste-wise, but as far as ease of preparation? nothing could be simpler. five minutes of prep, ten minutes of cooking, and not even vigilant cooking. i was in the other room watching a law and order criminal intent rerun. and i did really like the idea of using ground up oatmeal as the thickener instead of cornstarch or arrowroot powder.

oh, i looked it up and it looks pretty neato! i agree, oatmeal is a nifty idea! the other one does look way fancier though, woh!

I find it fascinating that Blossoming Lotus would proclaim their mac and cheez in the name of menehune because I am fairly certain that the menehune did not feast upon mac and cheez. But not because mac and cheez isn't delicious.. I just think that these magical little people would have lived on things more Hawaiian in nature ...like bananas, or papayas. But what do I know? I've been wrong before ... but seeing as how you did not describe this mac and cheez as "magically delicious" I suspect I might be right.

according to wikipedia, it seems like they should have reserved "menehune" for a banana bread recipe.

i seriously can't handle the recipe names in this book.

we must give the lotus the room it needs to breathe. goofy recipe names aside, (i can't take and don't understand many of them either), the lotus can pretty much do no wrong.
they are the land of cashew hummus, live granola with cashew cream, vegan soft serve, live pizza that kills me with deliciousness, simple good real food, and so much more.
i say this as i am currently wearing black (not a hawaiian print) and live in portland.
they cross all boundaries and they RULE! but i haven't made their mac-n-cheese. when i do i'll report back.

Oh I feel dumb...I eat a ton of mac and chreese but on two fronts, both cause it's non-dairy and because they make a brown rice noodle version with pasta that's actually quite good and not mushy...two great tastes that taste great together I suppose. But I think I'm still a baby vegan so I guess I'm okay.

franny, don't feel dumb. there's nothing wrong with [] and chreese, i just like having a lot more control over what i'm eating than food-in-boxes offer. for instance, i like that i can make my mac and cheez with the quinoa elbows instead of semolina, and that way i'm getting a whole grain + protein rather than just empty carbs. etc. etc.

Food looks great, but I mostly wanted to say that I love the term "baby vegan." It makes me giggle. Plus, that's meee! I'm doing pretty well at taking care of myself and not relying and packaged foods, though. Of course, there's always room in my heart/freezer for tofutti cuties.
