ready for summer!

i come from a part of the country where summer weather starts in late april. no matter how long i live in the northwest, i don't think i'll ever become fully adjusted to the fact that it's the end of may and it's still in the mid-50s! it's a good thing that i love the mild temperatures because it won't heat up around here for another two months.

for those of you in warmer climes who already have access to this produce, here is my favorite fruit salad recipe. the rest of us will just have to make due with a few more weeks of long sleeves.



Minty Summer Fruit Salad

Don't tell the vegan police but I'm not a big fruit fan. However, when Summer rolls around and the farmers market is packed to the gills with berries, there is nothing I want more than to cart it all home and live off giant fruit salads. After a few hours in the fridge, the color from the berries will dye the rest of the salad a very pleasing pinky-purple color. Good luck making it last that long.

Add all of the following to a big bowl:

2-3 ripe bananas, sliced
1 cup strawberries, sliced
1 cup raspberries or marionberries
1 cup blueberries
2 peaches, pitted and diced

Lightly toss so fruit juices mix. Then add:

juice of 1 small orange (~3T)
juice of 1 large lime (~2T)
1/2 cup mint leaves, chiffonade

Toss well. Serve immediately or allow to chill in fridge for a few hours.
